When it comes to great food, we believe tradition and innovation go hand in hand. While celebrating the beauty and bounty of Maine, Chef Jason Paul embraces modernist techniques and culinary tools to prepare food that is at once both familiar and original. We strive to present a menu that is bold and full flavored, while retaining the natural essence of our ingredients.
Sourcing locally, our menu offers classic New England flavors in a new way. We utilize unrefined, natural and seasonal ingredients, while applying advanced culinary techniques such as sous vide, dehydration, spherification, and emulsification. These methods allow us to serve cuisine that is crafted with care, wholly nutritious, and refreshingly flavorful.
Built as The Belfast National Bank, the ‘Gothic Building’ was designed by Portland Architect George M. Harding, in 1878. The High Victorian Gothic style adorns every corner of Belfast's flatiron building. The main dining room retains the original 16 foot tin ceiling, while both it and the bar room are surrounded by period wall moldings and window surrounds. Our kitchen has been refashioned as a state-of-the-art cooking environment, and our lower level crafted into an experimental preparation space.
